Smoked Chicken Wings - sweet white wine chunks Mr. Barrel


  • 4 tablespoon thyme
  • 4 tablespoon oregano
  • 4 tablespoon cumin
  • 4 tablespoon paprika
  • 4 teaspoon onion powder
  • 4 teaspoon salt
  • 4 teaspoon pepper
  • 50 chicken wings
  • basic brine, see recipe
  • wood sweet white wine chunks Mr. Barrel , for smoking


Brine the wings for about one hour. Combine dry ingredients, rinse chicken, pat dry and evenly rub mixture over the wings. Put in ziplock bag, and refrigerate for about 30 minutes.
Preheat the EGG to 225 F using indirect heat. Smoke the wings for about 2 hours. Change the EGG to direct heat using a cast iron grate. Grill at 400º F until the skin is crisp about 3-4 minutes per side.
